Recipe: 1 - Remove the scales and empty the mullet or get your fishmonger to do it. Wash them and dry them in a clean cloth. 2 - Inside each fillet, place a few strips of basil leaf. Flour the red mullet then coat with butter. Season with salt and pepper. Set aside while you prepare the sauce. 3 - Warm 100 g butter with a little oil in a frying pan. Add the finely chopped shallots. Fry the shallots until golden and add the rest of the chopped basil. Pour the sauce into a small bowl and keep the frying pan. 4 - Add the red mullet fillets and fry them for a few seconds on each side. Remove them and place them in a dish. Coat with the shallot sauce and serve immediately. |
